Domaine Fouassier was established in 1749 in Sancerre, in the Loire Valley of France. In the 1800's, Jules Fouassier is said to have been among the first to utilize innovative new techniques to protect the vines from pest- techniques which are still used by wineries around the world today. In 1923, when Sancerre was still a mostly unknown wine in France, Jules' eldest son Gustave helped to put it on the map by winning an important Paris wine competition. As the science of winemaking progressed in the 20th century, this estate embraced a philosophy of balancing tradition and technology in their approach to producing world class Sauvignon Blanc.

Now the 10th generation of Fouassier is at the helm of the Domaine, with brothers Paul and Benoit having fully embrace organic and biodynamic farming in their vineyards. They make this bottle of Sancerre using 100% Sauvignon Blanc grapes, harvested from their vineyards with plantings as old at 35 years. The wine is aged for 12 months in stainless steel to preserve the crisp and fresh nature of Sauvignon Blanc. It's also aged for a few months on lees, giving the wine just a bit more body and round mouth-feel.

The result is a bright and bouncy Sancerre, with classic Sauvignon Blanc notes of grapefruit, fennel, green apple, and lemon tart. This refreshing wine is an excellent companion to seafood and soft cheese.
